Chocolate Pudding Cake

Ingredients:
  • 1 box chocolate cake mix (I like Duncan Hines Devils food)
  • 3 Eggs
  • 1c water
  • 1/2c vegetable oil
  • 1c light brown sugar
  • 10 Tbsp (1/2c + 2Tbsp) unsweetened cocoa powder
  • 2c boiling water

A few notes on making this:
  • This is an easy way to elevate the box cake mix you probably have sitting in your pantry. With just a couple of extra ingredients and technique, you’ll have a special dessert.
  • To make whipped cream, just add 1 cup very cold heavy whipping cream to a stand mixer with a whisk attachment. Whip for 2 to 3 minutes, then add 2 tablespoons powdered sugar and1/2 teaspoon pure vanilla extract. Whip until you have fluffy medium peaks.

Directions:
  • Preheat oven to 350°F.
  • Butter and flour a 9x13 pan and tap out excess flour.
  • Make chocolate cake mix according to package directions and pour into prepared pan.
  • Mix brown sugar and cocoa together and sprinkle evenly over batter.
  • Pour 2 cups boilıng water over the top, dribbling it evenly.
  • Bake at 350°F for 25 minutes, then lower heat to 325°F and bake 10 minutes more,  or until it pulls away from the pan.
  • You will have a cake on top, and a chocolate sauce on the bottom.
  • Serve with whipped cream or vanilla ice cream.
